Healthy Cinnamon Pecan Granola Recipe

Granola is such a versatile food to have on hand. From a quick snack to breakfast, topped on yogurt for a crunch this recipe will keep you coming back for more.

Ingredients

  • 2 cup oats
  • 1 cup chopped pecans
  • 1/4 cup coconut oil
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • pinch of salt

Instructions

  1. Preheat the oven to 325* F
  2. Combine coconut oil, maple syrup, vanilla, cinnamon, and salt in a saucepan over low heat until combined and coconut oil is fulled melted.
  3. Mix the oats and pecans together in a large bowl.
  4. Add the liquids to the dry ingredients and fully combine.
  5. Add mixture to a cookie pan with parchment paper or a silpat on it, spread thin, and bake for 20 minutes.
  6. Let cool and enjoy!
