Healthy Cinnamon Pecan Granola Recipe

We started really eating granola during the pandemic and haven’t looked back since. It’s such a versatile dish. My family uses it for:

  • Breakfast: The crunch in a bowl of milk tastes just as good as any store-bought cereal. What makes it even better is that we know what is in it.
  • As a snack on its own: Need something easy to grab and go? Granola is the answer. It’s especially good when you’re hiking.
  • Topped on top of yogurt: Add some fruit puree and yogurt, and top with granola. It’ll give you that perfect sweet, creamy, and crunchy dessert you want.

Ingredients

You can opt for what granola works best for you. If you’re gluten-free, Bob’s Red Mill is a great option. And, of course, if you can get it locally, please do so.

I prefer my pecans chopped relatively small but you can chop them yourself to the size you want. Buy them pre-chopped or chop them yourself, this is your recipe and your time- no worries here!

I will forever and always recommend vanilla bean paste over vanilla extract. I think it gives it more flavor, and the speckles are so pretty. No hate if you use extract, of course. I recommend this brand.

Pro Tips for Making This Recipe

  • The more you spread out your granola, the crunchier it will be.
  • The same goes for how long you cook it; shocker, I know!
  • You can add other ingredients. Some of our favorites include:
    • Coconut flakes: add in halfway through cooking to get it nice and toasted
    • Chocolate chips and dried fruit can be added in once cooled.
  • You’re adding the silpat or parchment paper because you want the liquid mixture to stick to the oats and pecans, not the cookie sheet.
  • If you want it to be more clumpy, press down on the ingredients before you bake it.
  • Let the granola cool completely before breaking it apart.

Ingredients

Scale
  • 2 cup oats
  • 1 cup chopped pecans
  • 1/4 cup coconut oil
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • pinch of salt

Instructions

  1. Preheat the oven to 325* F
  2. Combine coconut oil, maple syrup, vanilla, cinnamon, and salt in a saucepan over low heat until combined and coconut oil is fulled melted.
  3. Mix the oats and pecans together in a large bowl.
  4. Add the liquids to the dry ingredients and fully combine.
  5. Add mixture to a cookie pan with parchment paper or a silpat on it, spread thin, and bake for 20 minutes.
  6. Let cool and enjoy!
